EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
The puff pastry baskets with ricotta and spinach are a very nice idea both as an appetizer and as a finger food. The puff pastry baskets are made simply by placing a square of puff pastry inside a small mould and by making the ends come out a bit irregularly.
The filling is made with ricotta and spinach to which you can add a few pieces of provola.
PUFF PASTRY BASKETS WITH RICOTTA AND SPINACH
Ingredients for 6 baskets: 1 roll of rectangular puff pastry – ricotta cheese: 250 gr. – spinach: 500 gr. about – Olive Oil – Garlic – Grated cheese: 3 tablespoons – provola: 1 slice Thick – egg: 1 – poppy seeds or sesame seeds – salt
First prepare the spinach. If you use fresh spinach, wash and drain. If you use frozen spinach, put it in a saucepan with very little water on the bottom and let it defrost (the alternative is to defrost it at room temperature).
Take a pan, pour olive oil and add a clove of garlic and a piece of chili pepper. As soon as the garlic begins to fry, add the spinach, salt and sauté in a pan for a couple of minutes until they are flavored with oil and garlic. Keep the spinach aside.
Take the ricotta cheese, put it in a bowl and knead it with a fork. Add the spinach and mix. Add also a small egg (it is used to compact the filling but it is not indispensable), the grated cheese and the provola cheese cut in small pieces. Mix it all up.
Take the puff pastry and make squares a bit ‘larger than the molds in which you have to put them. Cut out the pastry with all the parchment paper under and place it inside the molds by making it stick on the bottom.
Pour a nice spoonful of ricotta and spinach stuffing into each basket until you reach the border.
Put the filled puff pastry baskets inside a baking pan, brush the edges of the puff pastry that comes out with water and add some poppy or sesame seeds.
Bake the puff pastry baskets in the oven at 180° C for about 30 minutes, until they are golden brown.
