Saving at home – Stuffed zucchini


Hi everyone!

A simple, healthy and delicious dish: the stuffed zucchini.

The addition of the creamy cheese will make this recipe very tasty.

Let’s start:


Ingredients for 4 people: 8 round zucchini – 350 g cream cheese – 4 medium courgettes – 4 tablespoons breadcrumbs – 50 g peeled almonds – basil – mint – extra virgin olive oil – salt – pepper


Wash the zucchini, cut the upper cap and empty the inside. Arrange them in a saucepan with two tablespoons of oil, a clove of garlic, a few leaves of basil and a pinch of salt inside each. Pour half a glass of water, cover and cook over medium heat for 8-10′. If necessary add a little more water.

At the end of cooking must be soft when you insert a toothpick and dry well. Cut the other zucchini into thin slices, then in long strips, resembling the shape of spaghetti.

Season with salt and pepper and let them rest for 10 minutes.

Toast the breadcrumbs in a pan with two tablespoons of oil, add the chopped almonds.

Squeeze the zucchini strips, add the breadcrumbs and almonds, flavored with a few leaves of basil and mint cut thin and with a pinch of pepper.

Fill the zucchini round with a little of the mixture, add a spoonful of cream cheese and cover again with zucchini.

Complete with more cream cheese and fresh basil.
