ORANGE CREAM WITHOUT MILK AND EGGS
Ingredients for 4 people: 200 ml orange juice (about 2 oranges) – 2 tablespoons flour (about 20 grams) – 2 tablespoons sugar (about 30 grams) – 1 grated orange peel
Sift the flour in a saucepan and add the sugar. Stir with a whisk by hand.
Wash the oranges perfectly. Squeeze them with a juicer and add the juice to the flour and sugar. Stir again with the hand whisk to remove any lumps.
Add the grated peel of 1 orange and put the pan on the heat.
Let the cream thicken over low heat, it will take maximum 5 minutes.
Let the orange cream cool and serve as a dessert, adding thin orange slices on the cream.
You can also use this cream to fill cakes and tarts. With these doses you can fill a cake of 24 cm in diameter or a tart of 22 cm in diameter.
