Saving at home – Cracco style eggs

A recipe of disarming simplicity, prepared with a handful of ingredients, but which literally conquers all.

Let’s start:


Ingredients for 4 people: 4 eggs (best if very fresh) – breadcrumbs – oil for frying – salt


Divide the egg white from the yolk. You can use the egg whites for tomorrow’s recipe, always from the famous chef Cracco.

Spread on the bottom of a baking dish a layer of at least half a centimeter of breadcrumbs and form four small hollows.

Lay an egg yolk in the center of each one, taking care not to break it.

Then cover them with other breadcrumbs, creating a layer of half a centimeter.

Transfer the baking pan to the freezer for at least 2 hours (if you have a blast chiller, it will take 30 minutes).

At this point heat about 3 cm of oil in a pan.

Once you have reached 175 º C (measurable with a kitchen thermometer), fry the eggs for 60-75 seconds.

Drain gently and serve after passing them on paper towels.

The fried egg of Cracco is good eaten as it is, seasoned with just a pinch of salt. If you want to make the breading even more thick, after the time in the freezer, pass them one by one in the beaten egg and then again in the breadcrumbs. The frying time will remain unchanged.
