Asparagus and eggs are a genuine and much appreciated dish, typically in spring.
The delicate taste of asparagus is in fact enhanced by the egg, and, in particular by the red, creating pleasant sensations on the palate.
ASPARAGUS WITH SCRAMBLED EGGS
Ingredients for 4 people: 12 asparagus – 2 eggs – Parmesan – pepper – salt – butter
Start by cleaning the asparagus leaving the tips and the tender part of the stem intact, then cook for at least 20 minutes steamed or in boiling water.
Cook the eggs in a pan with butter using a fork, then add the asparagus and season to taste.
Once ready, serve the asparagus with a grated Parmesan cheese, salt and pepper.
