EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
The Provence style omelette is an easy to make dish, but it’s also very tasty thanks to the presence of cheese and the aromatic herbs.
This recipe comes from the South-East of France.
It can be eaten in every season and is a great single dish if served with a side salad.
PROVENCE STYLE OMELETTE (FRANCE)
Ingredients for 4 people: 6 eggs – 30 g butter – a pinch of marjoram – a pinch of thyme – a pinch of chervil – 2 tablespoons of cream – 4 basil leaves – a sprig of chopped parsley – 2 tablespoons of grated gruyère – 30 g grated Emmental – salt – pepper
First break the eggs in a bowl, beat them and add the cream, a pinch of salt and some pepper.
Once mixed, add the marjoram, thyme and chervil, all finely chopped.
Mix again and then add the grated Emmental.
At this point work the ingredients, so that they bind well together.
When the operation is over, take a pan and melt the butter.
Once melted, pour into the mixture, stir for a moment and then cook the preparation without stirring.
Finally, after having sprinkled it with grated gruyère, chopped parsley and basil, fold the Provencal style omelette on itself and serve it immediately.
