The curry sauce is a basic preparation used to accompany first courses of rice, meat and fish, but it is also excellent to bring to the table to dress the salad or a side of potatoes.
CURRY SAUCE (INDIA)
Ingredients for 4 people: 1/2 small white onion – 20 g curry – salt and pepper – 20 g flour 00 – 50 g butter – 125 ml broth
To prepare the curry sauce, gently cook a little peeled and finely chopped onion in a pan with the butter.
Meanwhile, pour the curry in a bowl and add some hot water. Stir with a teaspoon until the powder dissolves.
Add the softened onion to the flour and stir with a wooden spoon. Add also the diluted curry, little by little, and the broth. Add a pinch of pepper.
Cook over low heat for 25 minutes. Constantly check the consistency of the curry sauce, when it has reached the one you prefer to remove from the heat.
The curry sauce is now ready for use.
