Saving at home – Vegeterian Club Sandwich (USA)


Hi everyone!

Here we are with a quick lunch recipe: the vegetarian club sandwich.

Besides being really perfect as an alternative to the classic recipe with chicken, it is also healthy and tasty.

Let’s start:


Ingredients for 4 people: 6 slices of whole wheat bread – 2 egg whites – 100g cannellini beans – 5/6 leaves black cabbage – 1 spring onion – smoked scamorza – 3 leaves radicchio – salt – pepper – turmeric – paprika – extra virgin olive oil


Wash and cut the black cabbage leaves into thin strips. Heat some oil in the pan and stew the diced spring onion.

Add the black cabbage and sprinkle with half a glass of water. Cook over medium low heat for about 5-8 minutes.

Sauté the black cabbage in a pan but not overcooked (it must remain rather crisp).

Once ready, leave aside.

Now prepare two egg whites: heat a little olive oil in a pan and beat the egg whites with a pinch of salt, a pinch of pepper and a little paprika.

Cook a few minutes on one side then turn the frittata and cook on the other side.

Toast the bread slices, (3 for each sandwich). Meanwhile, blend the cannellini beans (white beans) with a drizzle of oil, a pinch of salt, a pinch of pepper and a pinch of turmeric. Stop the mixer when you get a thick cream.

Finally, wash the radicchio leaves and cut the scamorza into very thin slices.  Fill the sandwiches by putting on a slice of bread a few slices of scamorza and the leaf of radicchio, on another slice of bread a spread of white bean hummus and egg whites omelet, on the last slice a little bit of hummus and black cabbage sauteed together with the spring onion.

Couple the slices in order to have the three layers of filling inside.

Keep the sandwich together with two toothpicks and cut in half to have two portions and serve.
