Saving at home – Potato salad

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!

Nowadays we are lucky to be able to find so many ready dishes at the supermarket, but believe me, homemade potato salad (what in Europe we call Russian salad) is really something else.

Depending on the country, the ingredients vary a bit. In countries like Russia, it is mandatory to add meat as well.

Please remember that this salad should be kept in an airtight container in the refrigerator for a maximum of 2 days. 

Freezing is not recommended.

Let’s start:

POTATO SALAD

Ingredients for 4 people: 200 g Carrots – 300 g Peas – 500 g potatoes – 2 eggs – 30 g Extra Virgin Olive Oil – 10 g Apple Vinegar – a pinch of salt – a pinch of black pepper.
FOR MAYONNAISE: 2 Egg yolks at room temperature – 200 g Sunflower seed oil – 25 g Lemon juice – 3 g Vinegar – a pinch of black pepper – a pinch of salt

Preparation:

First put the eggs in a saucepan, cover with cold water and cook for 9 minutes from the beginning of the boil. Once cooked, put them in a bowl to cool. In the meantime, peel the carrots and potatoes and cut into 0.5 cm cubes.

Take a large pot to steam the vegetables: first add the peas that will cook for 10 minutes, then add the potatoes that will cook for another 7-10 minutes. Finally add the carrots, cover with the lid and cook for another 5-7 minutes.

Now shell the eggs and cut them into cubes. When the vegetables are cooked, transfer them in a bowl and let cool.

Add the boiled eggs to the vegetables, then season with salt, pepper, olive oil and apple vinegar. Stir gently and let cool.

Meanwhile prepare the mayonnaise: put the egg yolks in a bowl, add the salt, pepper and white wine vinegar (or apple vinegar), then start working with an electric mixer.

Pour the oil taking care to do it very slowly to prevent mayonnaise from going crazy. When the mixture is whipped add the lemon juice and work again with the whips until you get the desired consistency.

Add the mayonnaise to the vegetables and stir well to mix. Let the potato salad rest in the refrigerator for at least an hour before serving!
