Saving at home – Microwave cheesecake


Hi everyone!

Are you into cheesecake, too?

It’s one of my favorite desserts but the original recipe takes really long!

I found this microwave version and I decided to try it. It’s so good!!!

And it will take you half the time!!

Let’s start:


Ingredients for 4 people: 30 g Santa Lucia Galbani Classic Butter – 8 short cookies
Filling: 150 g Cream Cheese – 100 ml fresh cream – 2 tablespoons of sugar – 1 egg – 1/2 lime (a spoon of lemon juice will also be fine) – 2 drops of vanilla essence


Finely chop the cookies and add them to the Butter previously melted in bain-marie. Mix to obtain a liquid-free and well-compact compound and form bases inside high and single-portion moulds. Let it rest in the refrigerator for 15 minutes.

Meanwhile prepare the filling by mixing the cream cheese, sugar, egg, vanilla essence and lime.

Separately whip the cream and pour it into the mixture obtained with slow movements and from bottom to top.

Remove the bases from the refrigerator and fill with the cream obtained, leaving half an inch free on the top edge.

Put the single portions in the microwave for 4-5 minutes at 800W, then put the cheesecake in the refrigerator for 60 minutes.

You can serve the microwave cheesecakes without any decoration or “coloring” at will with dark or white chocolate chips, hazelnut cream, black cherry or caramel.
