Here we are with another quick recipe, but good and healthy at the same time: the potato soup with beans and tomatoes.
POTATO, BEANS AND TOMATO SOUP
Ingredients for 4 people: 1 thinly chopped onion – 3 potatoes – a jar of beans – 1/2 jarof tomato puree – 1 l of water – 100 g grated Parmesan – extra virgin olive oil
First, let the onion dry (on high heat), in extra virgin olive oil.
Cut the potatoes into cubes and add them to the onion. Add the tomato sauce and water. Cook at (making sure it does not burn) for about 15 minutes.
When the potatoes are quite soft, add the beans and salt.
Cook for another 10 minutes. Finish with the grated Parmesan and serve immediately (if you want the vegan version, just omit the Parmesan).
Your plate today is ready!
