EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
This quiche with cherry tomatoes and ricotta cheese is a tasty and simple recipe to prepare.
You can prepare this pie on many occasions: for a last minute dinner or to enrich a buffet of appetizers.
QUICHE WITH CHERRY TOMATOES AND RICOTTA CHEESE
Ingredients for 4 people: 1 phyllo dough roll – 250 g of Ricotta cheese – 100 g of Emmenthal cheese – 2 eggs – 200 ml cream – 50 g of grated Parmesan – 250 g of cherry tomatoes – fennel seeds – thyme – dried oregano – extra virgin olive oil
Begin by working in a bowl the Ricotta cheese with eggs, cream, parmesan, salt and black pepper.
Add grated Emmental cheese too.
Line a round baking pan with a roll of phyllo dough, pierce the bottom with the tines of a fork and pour over the filling leveling it.
Wash the tomatoes, cut them in half and arrange them with half cut facing upwards on the stuffing: fragranced with dried oregano, fennel seeds and exfoliated thyme.
Salt, pepper and sprinkle with a drop of extra virgin olive oil.
Bake in a hot oven at 170 ºF. for about 45 minutes.
