EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Today we will see how to prepare a simple and very tasty dish, particularly suitable for spring: Pasta with cream of peppers.
You can try several variants: replacing the marjoram with thyme or oregano (both fresh).
If you want an enriched recipe just add the Tuscan pecorino cheese, rocket salad or with the addition of chopped onion or shallot previously fried.
PASTA WITH CREAM OF PEPPERS
Ingredients for 4 people: 400 g. short-cut pasta – 3 red peppers – 200 ml of fresh cream – 1 sprig of marjoram – olive oil – salt and pepper
Start by washing the peppers, dry them and place in a baking sheet lined with parchment paper (wet and squeezed); cook in the oven already hot at 250 º C. for about 15 minutes turning them at half cooking. Turn off the oven and let them rest inside for 5 minutes.
Remove the skin of the peppers, the stalk, seeds and white filaments, then cut into cubes.
Clean the marjoram, wash it and dry it, then put it in the mixer with the cubes of peppers and two tablespoons of extra virgin olive oil; blend until you get a homogeneous mixture.
Heat the cream over low heat with a tablespoon of oil for about one minute, then add the cream of peppers, salt and pepper.
Meanwhile cook the pasta, pour it into a bowl, cover with the cream and stir.
