RICOTTA CUPS WITH LIME
Ingredients for 3 light Ricotta cups: 3 medium untreated limes – 60 g sugar – 2 very fresh egg whites
Drain the light ricotta cheese from its liquid. Add the sugar and work with a whisk until the mixture becomes foamy.
Grate the lime and set aside the rind. Pass the fruits and add the juice to the ricotta cheese (little by little, tasting until you get the desired degree of acidity).
Whip the egg whites until stiff and add them to the ricotta trying to keep the volume.
Fill the cups and leave in the refrigerator for two hours.
Before serving, season with the grated lime zest.
