VEAL FILLET WITH CHEESE CREAM
Ingredients for 4 people: 8 slices of veal fillet (about 320 g) – Caciotta cheese in slices (or other cheese that melts) – white flour – 20 g Butter – olive oil – 1 glass white cooking wine (or apple vinegar) – salt – pepper
To make the veal fillet, pass the fillet slices into the flour and shake the surplus of the same.
Heat 20 g of Butter in a pan with 2 tablespoons of oil.
Brown the meat in the hot fats until they get coloring on both sides.
Wet the meat with a glass of white cooking wine (apple vinegar), then let it evaporate. Add Salt and pepper.
Lay the cheese slices on the meat. Put the lid on the pan, lower the heat and cook for about 2 minutes (the time required to melt the cheese).
Uncover and turn the slices in the thick sauce that will be formed in the meantime.
Serve them hot and season with plenty of sauce.
