Today we will see how to make Booza, or Lebanese ice cream.
You may wonder what differentiates it from ordinary ice cream: the first feature is the taste with a pink background and the use of Arabic gum that makes it more elastic.
BOOZA (ICE CREAM) – LEBANON
Ingredients for 4 people: 450 ml of fresh whole milk -2 tablespoons of corn starch -250 ml of fresh cream -100 grams of sugar -1 pinch of salt -1 tablespoon of rose water -1 sachet of saffron powder – half a teaspoon of gum Arabic (the Sahlab would be even better) – 50 grams of pistachios
Pour about half of the milk into a saucepan and slowly add two tablespoons of corn starch.
Mix with a whip to prevent the forming of lumps.
Once the starch is completely dissolved, you can add the rest of the milk, stirring constantly.
Add 250 ml of fresh cream and turn on the stove (low heat). Keep stirring.
Add 100 g of sugar (80 if you don’t want it too sweet). Keep turning. Add a pinch of salt.
Add 1 tablespoon of rose or orange water (you can find in ethnic foods).
Pour in a bag of saffron and keep turning.
Once you have obtained a thick cream, add the Arabic gum powder.
When it reaches the boil, remove from heat. Leave the mixture in the refrigerator for one night.
The next day put the mixture in the ice cream maker and put into operation for 30 minutes.
If you do not have an ice cream maker, you can leave it to rest in the freezer overnight. With the ice cream maker, however, the result is definitely better.
5 minutes before the end of the ice cream maker cycle, insert the roughly chopped pistachios.
Transfer it to a tray with lid and put in the freezer for another 4 hours.
