Saving at home – Meat pie pastry (Sfiha) – Middle East


Hi everyone!

This is another recipe I really love!

The sfiha are small pies covered with meat and pine nuts.

They are simple to do and you can also make bigger quantities and keep in the freezer..

Let’s start:


Ingredients for 4 people: 6 cups plain flour – 2 cups lukewarm yoghurt – 1 cup olive oil – 1 teaspoon salt – 1/4 cup warm wateer for moistening the hands – 3 teaspoons baking powder dissolved (or 15 g fresh yeast) – 1/2 cup warm water
for the filling: 200 g minced meat – 1 small onion, finely chopped – 1/4 cup pine nuts – 1/4 cup ghee or butter – salt – pepper – cinnamon – 1 teaspoon sumac – 1/2 cup grated gruyere cheese


Dissolve the yeast in the water and set aside. Then sift the flour on a pastry board or marble table top. Add the salt to the flour, mix well and make a well in the middle.

Mix the yoghurt, olive oil and dissolved yeast and pour into the well. Work the dough lightly.

Knead the dough well for 20 minutes. Moisten the hands while kneading to make the dough smoother and non sticky.

Brush the ball of dough with a little oil. Place in a bowl and cover with a piece of cloth. Let stand in a warm place until it is almost double in size.

Knead the dough for 2 more minutes and divide into small balls. Cover the balls with a piece of cloth.

Now proceed with the filling:

Brown the pine nuts in 1/4 cup of ghee (or butter). Remove and drain.

Sauté the onion in the remaining ghee until soft. Add the minced meat and seasoning and keep frying all the ingredients for 15 minutes.

Remove the skillet from the heat and add the grated cheese, sumac and pine nuts to the meat mixture.

Combine well.

With a rolling pin make the little pizzas and place on top the meat mixture.

Cook in preheated oven at 200° C for 15 minutes.

Your meat pie pastries are ready!
