Saving at home – Zighinì (Ethiopia – Eritrea)

Today I propose a recipe typical of Eritrea and Ethiopia.

What makes this dish special is the mix of spices typical of the area (Barbaré), which you can find in ethnic shops.
It is usually served with the typical local bread, injera, but it is also very tasty with plain white rice.

Let’s start:


Ingredients for 4 people: 500 gr beef – 100 g butter – 250 g peeled tomatoes – 6 red onions – 1 clove of garlic – 3 teaspoons mixed spices (Barbaré) – 4 cardamom berries – a bit of ginger powder – extra virgin olive oil – salt


Cut 500 g of beef into cubes of about 3 cm, peel 6 red onions and chop finely. Crush 1 clove of garlic, peel and chop finely. Cut 4 cardamom pods with a knife, open it, take the seeds and crush them in a mortar, until they are powder.

Bake the onions. Heat a saucepan, add the chopped onions and brown with 6 tablespoons of oil for 7-8 minutes, until they begin to brown and add 3 teaspoons of berberè (mix of chopped spices that is found only in the well-stocked ethnic shops. is composed of chili, ginger, cloves, coriander, Pimento, cardamom, black pepper, cinnamon, cumin, mullet, chili, turmeric, paprika, nutmeg, salt and garlic).

Complete and serve: add 100 g of butter in small pieces and the meat in cubes and sauté for 5 minutes. Add the finely chopped peeled tomatoes and 1/2 l of hot water, mix well and season to taste with salt. Add the cardamom powder and a pinch of ginger powder and continue cooking the meat covered with a pot, on low heat for about an hour by adding, if necessary, more hot water.

Serve this delicious African dish accompanied, as desired, with injera bread, Arabic bread or white rice.
