Here we are with another EASY AND ESPECIALLY FRESH RECIPE, suitable for hot summer days: barley salad with cheese and cherry tomatoes.
If you want a vegan version, you can replace the cheese with the different soy (tofu, etc), options on the market.
BARLEY SALAD WITH CHEESE AND CHERRY TOMATOES
Ingredients for 4 people: 200 g di CHEESE – 300 g of pearl barley – 1 small onion – 150 g of tomatoes – 3 sprigs of parsley – 2 sprigs of mint – evo oil
Boil the barley in boiling salted water. Apart slice the white part of the spring onion and cut the tomatoes into wedges.
Finely chop the parsley and mint and cut the cheese into cubes.
Drain the barley, cool it under cold water and season with the tomatoes, cheese, onion, 2-3 tablespoons of oil and a pinch of pepper to taste.
Mix well, then complete with chopped herbs.
Stir once again and serve the barley salad with cheese and cherry tomatoes.
