LEBANESE ZUCCHINI CROQUETTES (LEBANON)
Ingredients for 4 people: 600 grams of courgettes – 2 eggs – 100 grams of pecorino cheese – 150 grams of breadcrumbs – dried chili pepper – sesame seed oil – salt and pepper
First clean, wash and boil the zucchini in boiling salted water for about 7-8 minutes.
Drain, chop in a mixer and let cool in a bowl.
Add the whole eggs, a little pepper, grated cheese and two tablespoons of breadcrumbs in order to make the mixture more solid.
Mix well, stirring with a wooden spoon and form balls as large as a walnut that you will then pass into the breadcrumbs.
All you need to do is fry the zucchini croquettes in a pan with plenty of sesame oil.
As soon as they get a nice golden color, remove them and pass them with a skimming ladle on paper towels.
They are excellent served hot or just warm.
