Saving at home – Rice and chicken kosba (Middle East)


Hi everyone!

Do not be misled by the amount of ingredients that will make you think you have to waste hours in the kitchen for this dish!

In reality it is not at all a complicated recipe and the result is truly unique. The spice mix will take you into the magical environment of the Middle East.

Let’s start:


Ingredients for 4 people: 1 large chicken cut into 8 pieces – 1/2 dl oil (peanut, sunflower or corn) – 2 medium onions sliced thinly – 2 ripe tomatoes peeled and chopped – 3 dl tomato puree – 3 tablespoons tomato concentrate – 4 4 cloves of garlic peeled and crushed – 2 medium grated carrots – the grated peel of an orange – 4 cloves – 4 cardamom berries – 2 tablespoons of cinnamon – salt and pepper – 450 grams of long-grained rice – 1 handful of raisins – 1 handful of dark almonds and divided in half


Brown the onions with the oil in a rather large pot.

Add the pieces of chicken and garlic and sauté, stirring for another 5 minutes.

I suggest you choose a chicken raised on the ground or even better an organic one.

Add the tomatoes, the tomato purée, the concentrate, the grated carrots, the orange peel and 8 dl of boiling water.

Add salt and pepper.

Cook covered for 20/25 minutes, or until the chicken is cooked.

Remove the chicken from the heat and keep it warm.

Pour the rice into the pot and cook covered until the rice is cooked and all the liquid absorbed.

If the rice is not cooked and is dry add more hot water or cook without a lid.

Pour the rice on a serving dish, arrange the chicken pieces on top and sprinkle with the raisins and the almonds.

Serve hot.
