Saving at home – Vegan chocolate cheesecake

Hi everyone!

It’s been a while since I suggested a 100% vegan recipe.

Today we’ll see how to make a delicious chocolate cheesecake.

Let’s start:

VEGAN CHOCOLATE CHEESECAKE

Ingredients for 4 people: 400 ml soy milk – 100 g dark chocolate – 300 g tofu – 300 g vegan chocolate biscuits – 100 g brown cane sugar – 30 g corn malt – 50 g cocoa powder – 5 g agar agar

Preparation:

Starting by preparing the biscuit BASE that you will put to cool in the refrigerator.  Blend the biscuits in the mixer until you get a fairly fine powder, then add the corn malt and stir well. Transfer the dough into the a cooking pan lined with baking paper and put some pressure with your hands so that it forms a compact bottom.  Then let it rest in the refrigerator for 30 minutes.

Meanwhile, prepare tofu cream.  Blend the vegan cheese together with the cocoa and melted dark chocolate previously in a bain-marie, then transfer everything in a saucepan and add the soy milk, brown sugar and agar agar.  Put on the heat and bring to a boil, stirring constantly with a whisk to remove any lumps. 

Now compose your vegan cheesecake: take the biscuit base from the refrigerator and pour over your tofu and chocolate cream. Level the surface well and check that there are no bubbles, then let it cool and put your cake in the refrigerator for at least 2-3 hours before serving. 

Your cheesecake,being free from any animal ingredients, is ready to be enjoyed by everyone.
