Saving at home – Pumpkin tart

It’s October!!! Halloween is coming soon and we’ll prepare a cake suitable for the occasion: the pumpkin tart.

For the occasion you can also customize it by drawing a web with sugar based cream.

Let’s start:


Ingredients for 4 people: For the cocoa pastry: 150 g flour – 100 g butter – 100 g dark chocolate – 30 g sugar – 30 g bitter cocoa – 1 egg – 1/2 teaspoon cinnamon – 1 pinch of baking soda – 1 pinch of salt For the cream: 160 g brown sugar – 400 g pumpkin – 130 g ricotta – 3 eggs – 1/2 teaspoon cinnamon – 1 pinch of nutmeg


To prepare this delicious pumpkin tart first of all you have to make the pastry with cocoa: mix flour, sugar, cocoa, salt and cinnamon in a rather large bowl, then also add the butter softened at room temperature, the egg and a pinch of baking soda and knead until a smooth and homogeneous mixture. Form a ball, wrap it in film and put the pastry in the refrigerator to rest for at least 30 minutes. At this point, roll out the dough with a non-stick rolling pin and use it to line your tart mold, pierce the bottom with a fork then cover it with baking paper and dried legumes (or any other weight) and bake at 180° C. for 10 minutes.

In the meantime prepare the cream: cook the chopped pumpkin in steam for 2 minutes, then blend it with sugar, ricotta cheese, eggs, cinnamon and nutmeg.

As soon as you bake your cocoa pastry shell, fill it with the crumbled dark chocolate and wait for it to melt, then pour also the pumpkin cream and bake at 180° C for 40 minutes.

Let your pumpkin tart cool before decorating: for the decorations you can use chocolate ice and draw on the surface a web that is very simple to make. If you are not very creative, you can take inspiration from the photograph you see above: the decoration is of great effect and really simple!
