Saving at home – Yeralma Yumurta cheese and potatoes (Iran)


Hi everyone!

Today we start again sharing recipes from all over the world with this Yeralma Yumurta of cheese and potatoes.

An easy to make recipe, suitable for a snack or for a savory breakfast.

Let’s start:


Ingredients for 4 people: 1 medium-sized potato (about 115 g) peeled and cut into quarters – 1 egg – Chopped fresh herbs – Crumbled feta (optional) – Dried mint – 1 piece of Armenian or Iranian bread (if you don’t find it, you can safely use Arabic bread) – extra virgin olive oil – salt and pepper


Put the potato in a saucepan. Cover with water (about 500 g) and add 2 g of salt. Cover and bring to a boil over high heat. Lower the heat and cook until the potato is soft (about 15 to 20 minutes).

In the last 5 minutes cook the egg: Put it in a saucepan, cover with water and bring to a boil over high heat. Lower the heat and cover the pan for 4 to 5 minutes to obtain an egg with liquid yolk. If you prefer a solid yolk, cook for 6 or 8 minutes, or up to 10 minutes for a very cooked yolk. Set aside and let cool.

Put the potato in a saucepan and crush it with a fork. Finish with a drizzle of extra virgin olive oil.

Sprinkle with a pinch of salt and black pepper. Abound with oil and salt, this will be the key to the success of this tasty recipe.

Place the potato on the bread, place the egg on top, and crush or cut in half to let out the yolk.

Sprinkle with salt and pepper. Finish with mint, feta and herbs. Complete with a few more drops of extra virgin olive oil, roll up the bread, fold it in half and eat it!!!
