Saving at home – Tuna and onion omelette

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!

Here we are, at the end of October, getting close to the cold winter days with a recipe that will be appreciated by all: the tuna and onion omelette.

Let’s start:

TUNA AND ONION OMELETTE

Ingredients for 4 people: 2 packages of Tuna in olive oil 160 g – 5 eggs – 2 white and sweet onions or 3 spring onions – a sprig of parsley – a sprig of parsley – 2 tablespoons grated Parmesan – 1 bay leaf – 50 g extra virgin olive oil – salt and pepper

Preparation:

Clean and slice the onions thinly then put them in a non-stick pan with bay leaf, 30 g of oil and a pinch of salt and pepper, cook over medium heat and with the lid turning often until they become transparent and soft without browning.

Chop the parsley, remove the bay leaf from the onions, beat well in a bowl with the eggs and a pinch of salt.

Add the well-drained and chopped tuna, parsley and onions to the eggs.

Heat a non-stick frying pan with a diameter of 24 cm by adding a drizzle of oil, when the pan is hot pour the mixture and move it lightly with a fork so that it cooks evenly,

When it seems quite thick turn it and cook on the other side covering a little with the lid if necessary.
