And who’s to say that spelt salad has to be a summer recipe?

Today we will see how to prepare a spelt salad with vegetables that are easily found in this season.

Let’s start:

WINTER SPELT SALAD

Ingredients for 4 people: 240 grams of spelt, washed and rinsed – 3 tablespoons of extra virgin olive oil – 600 grams of water – 1 courgette – a couple of tablespoons of mixed fried: celery, carrots, onions (also frozen) – 200 grams of peas, washed and rinsed from the water – 1 tomato – salt and pepper

Preparation:

Put the oil in a saucepan, brown the spelt, cover with water and add a little salt.

Bring to a boil and cook until it has taken a little color.

Drain in case there is water left, and put it in a bowl.

In another, in a little oil, brown the mixed vegetables, add the zucchini washed and cut into pieces and let dry with a little water,

Add the tomato, previously washed, and cook; add the peas and season with salt.

Place the spelt in the bowl of the vegetable dressing.

Mix and serve at room temperature.
