Saving at home – Ashure: pudding without milk and eggs

Hi everyone!

Here we are today with a vegan recipe: The Ashure, pudding without milk and eggs which has ancient origins.

Despite the absence of butter and eggs, usually present in almost all desserts, I can guarantee that it is delicious and also very healthy.

Let’s start:

ASHURE: PUDDING WITHOUT MILK AND EGGS

Ingredients for 4 people: 250 g of wheat or precooked spelt – about 80 g of cane sugar – 20 g of peeled, unsalted pistachios – 20 g of raisins – 2 tablespoons of potato starch – 1-2 pomegranates – 6 dried apricots – 1 stick of cinnamon – orange peel – coconut flakes to decorate

Preparation:

Slice the dried apricots and chop the pistachios. Open the pomegranates with the help of a sharp knife and cut the grains, taking care not to break them.

Dilute the starch in a glass of water and transfer all in a pot. Add the wheat or spelt, sugar, raisins, dried apricots, orange peel and cinnamon stick (if you have trouble finding it, you can replace it with cinnamon powder, a small spoon), and bring to a boil.

Cook for about 10 minutes, stirring continuously, until the mixture appears dense and fragrant.

Remove the cinnamon stick, add the pistachios, then distribute in six cups. Complete with the pomegranate and the coconut flakes, then serve.
