Today we will see how to prepare a good meat broth, very important for the success of risottos and soups.
Preparing a good broth of meat is not difficult, but there are some small arrangements that are very important to follow in order to have good results.
Ingredients for 4 people: 2 l water – 500 g boiled with bone – 1 carrot – 1/2 onion – 3 tomatoes – 1 celery stalk – 1 teaspoon salt
First wash the piece of meat and clean the vegetables.
Put the meat in a pot of cold water.
As soon as the water has reached the boil, add the vegetables.
Season to taste with salt and let the broth simmer for about 2 hours. From time to time, skim the meat fat that will float.
At the end of cooking, filter the broth from the vegetables.
Use the meat broth to cook small pasta and enjoy the piece of meat that will be tender.
