Today we will go for a very appetizing recipe, which will require only 20 minutes of your time and very few ingredients. We’re talking about the leek omelet.
The leek omelette is a very tasty single dish, prepared with a few simple ingredients such as eggs, leeks and Pecorino cheese.
Let’s start:
LEEK OMELETTE

Ingredients for 4 people: 4 Whole eggs – 2 leeks – 100 g Pecorino cheese – 1 sprig of parsley – Extra Virgin Olive Oil – Salt and pepper
Preparation:
Clean the leeks, removing the greenest part and cutting the white one into thin slices. Heat a couple of tablespoons of extra virgin olive oil in a non-stick frying pan, add the leeks and let them stew over low heat until they become transparent.
Beat the eggs in a bowl with the grated Pecorino cheese and chopped parsley, season with salt and pepper and pour into the pan the mixture obtained, taking care to distribute it evenly over the entire surface.
At this point, turn up the heat until the eggs are firm for a few minutes.
When the edges start to detach, turn the omelette and cook it on the other side, then transfer it to a dish and serve.
