Among my favorite desserts there is one in particular that I love a lot: chocolate mousse.
For its high calorie content, however, I do not prepare it often. Today we will see how to prepare it in a light version, so as to satisfy our palate but also our fitness!
LIGHT CHOCOLATE MOUSSE
Ingredients for 4 people: 3 egg whites – 120 g dark chocolate – 6 tablespoons of skimmed milk – 80 g of sugar – 1 teaspoon of bitter cocoa powder – a pinch of salt – For the ricotta cream: 500 g of Light Ricotta cheese – 2 jars of low fat yogurt – 3 tablespoons of sugar
Prepare the light Ricotta cream by mixing in a bowl and with an electric whisk the Light ricotta cheese and the yogurt together with the sugar. Get a soft and velvety cream consistency let rest in the fridge and start preparing the light chocolate mousse.
Coarsely chop the dark chocolate and add it to the skimmed milk in a saucepan. Cook the mixture in a double boiler for 4 minutes and gently melt the chocolate.
Dissolve the sugar in 8 tablespoons of water over a moderate heat in another saucepan.
Remove the pan from the heat when the mixture will assume a consistency similar to a syrup.
Take a bowl and whip the egg whites until stiff, adding just a pinch of salt. Slowly add the sugar syrup and continue to beat. Then add the melted dark chocolate, stirring gently with a wooden spoon so as not to disassemble the egg whites.
Pour the light chocolate mousse into single-portion bowls and cover each with the Light ricotta cream.
