This salad is a tasty and tasty preparation, which is made quickly and can be enjoyed as a main course thanks to the presence of the salmon that makes it a complete dish.
The salmon and zucchini salad is perfect for those who love salads and always want to try new tastes and combinations.
For the vegan version, omit putting the cheese.
SALMON AND ZUCCHINI SALAD
Ingredients for 4 people: 300 g zucchini – 100 g smoked salmon – 100 g Certosa cheese (or other white soft cheese) – 1 Tropea onion (red onion) – 1 lemon – extra virgin olive oil q.b. – PEPPER
First, squeeze the lemon.
Cut the slices of salmon into strips and arrange on a plate spreading them well, sprinkle with a grind of pepper, pour over the lemon juice and let marinate.
Wash the zucchini well, clean and cut into rounds. Peel the red onion and slice it.
Gather in a bowl the zucchini and onion, season with 2 or 3 tablespoons of extra virgin olive oil, mix well then add the strips of salmon and stir again.
Transfer the salmon and zucchini salad into a serving dish and place some Certosa (or other soft white cheese) pieces on top.
