Saving at home – Eggplant skewers


Hi everyone!

Are you looking for a recipe a little different from the usual and super tasty? Then try to make these eggplant skewers. They will surely be appreciated by all.

Let’s start:


Ingredients for 4 people: 3 medium-sized round eggplants – 1 provola – 80 g grated cheese – 25 g pine nuts – 100 g breadcrumbs – pepper and salt – 1 onion cut into leaves and bay leaves (2 x each roll) – bamboo skewers long. For breading: 3 eggs – flour – breadcrumbs. For cooking: seed oil – salt


Wash the eggplant, dry and remove the part of the leaf.

Cut in thin slices, they should not be too thin or too thick (because otherwise you will not be able to roll them), put them in a colander sprinkled with salt for 30 minutes in order to lose their bitter water and also soften.

Now prepare the mixture for the filling as follows: toast the breadcrumbs with a little extra virgin olive oil, salt and pepper, add the pine nuts and wait for it to cool. Finally, add the Parmesan cheese.

Take the eggplant slices, put some breadcrumbs and a little cheese on each slice, then close it on itself to form a simple roll.

Prepare 2 long skewers by first impaling the onion then the bay leaf and then the eggplant roll, make 6 rolls then insert again the bay leaf and onion.

Now pass to the breading: arrange in two separate plates the flour and the breadcrumbs respectively. In a bowl beat the eggs.

Gently take each roll without risk of emptying it and placing it a first time in the flour, then dip it immediately after in the beaten egg and finally a last time in the breadcrumbs.

Prepare a pan with high edges and heat the frying oil and, as soon as it is hot, dip the eggplant skewers in it, the oil must completely cover its surface.

Cook over medium heat, they will be cooked when they get a golden color, then place them on baking paper and finally serve still hot.
