Do you know what is a semifreddo? In Italy, it’s a dessert, similar to an ice cream, but not so cold. It’s consistency is more creamy… and absolutely delicious!

In Italy, we usually cover it with coffee, but it’s also very good eaten alone.
SEMIFREDDO IN MY OWN WAY
Ingredients for 4 people: 400 g Ricotta cheese – 180 g chocolate biscuits- 150 g sugar – 125 g chocolate chips – 125 g coconut flour – alchermes-type liqueur (or fruit juice)
Pour the alchermes (or juice) into a bowl and quickly soak the chocolate biscuits that you will place in a single layer in a rectangular baking dish.
Whip the ricotta cheese with the sugar. Once whipped, add the coconut flour and chocolate chips. After amalgamating the ricotta mixture, pour it on the basis of shortbread leveling it with the blade of a knife.
Sprinkle the semifreddo with a few more drops of chocolate and keep it in the freezer for at least two hours before serving.
