EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!
Today we will see how to make a potato salad with tuna, a nutritious and fast recipe that, as usual, is really delicious!!
Let’s start:
TUNA AND POTATO SALAD

Ingredients for 4 people: 2 packages of Tuna in oil (300 g) – 700 g of potatoes not very large – 1 spring onion – 30 g of black olives pitted – a spoonful of capers in vinegar well drained – a sprig of parsley – 40 g of extra virgin olive oil – salt and pepper
Preparation:
Wash the potatoes well and let them cook them in boiling water for about 30 minutes. Thinly slice the spring onion and put it in a large bowl with the capers, olives, oil and chopped parsley then add a few tablespoons of the cooking water of the potatoes.
Drain the potatoes, remove skin, cut into slices and pour into the bowl and turn them gently. Season to taste with salt and pepper.
Drain the tuna well from its oil, chop it and add it to the potatoes.
Mix well and serve.

Nice. Boss is not keen on potatoes. These ingredients, capers, onion, and ripe olives especially, made me record the link for later use, when I’m on my own for a meal. I may, though, use water-packed tuna. Thank you!

Even water-packed tuna will do and better for the diet 🙂
