EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Made with meat, vegetables, or fish, with sauce or fried: the croquettes will be loved by all, I have this time opted for the Tuna croquettes with carrot cream.
TUNA CROQUETTES WITH CARROT CREAM
Ingredients for 4 people: 400g of carrots – 1 clove of garlic – 8 dl of vegetable broth – 30 ml of vinegar – 1 lime – 2 tablespoons of olive oil – 1 chilli pepper – salt. For the croquettes: 250 g potatoes – 100 g sweet potatoes – 1 package of Tuna with 240 g Olive Oil – 2 eggs – breadcrumbs – one piece of fresh ginger – salt and pepper – 2 cloves of garlic – 12 leaves of rocket – oil with chili – 80 g extra virgin olive oil – 2 cloves of fresh garlic
Sauté the poached garlic with chilli pepper and oil and add the carrots cut in pieces. Blend with vinegar, cover with broth and add the lime zest (if you do not find it you can replace it with lemon). Lower the heat and cook. Remove the garlic and chilli, blend everything.
Boil the potatoes, peel and pass through a vegetable mill. Add the drained tuna, grated ginger, a little salt and pepper.
With the mixture make some croquettes, pass them in beaten eggs and breadcrumbs, fry in plenty of oil, drain, pass them in paper towels and let them cool.
Slice the remaining garlic clove and fry the slices for a minute. Serve the cream in individual bowls with croquettes in the center and garnish with slices of garlic and a few leaves of rocket salad.
