This cream can be useful in making an excellent and tasty first course based on fish: in fact, in addition to being already a condiment, you could combine it, for example, with anchovies or tuna.
In addition, its preparation is really fast and, if you have little time available, this dish could be for you a great compromise between taste, simplicity and flavor.
Of course, you can also use it to create canapés to serve as an appetizer.
Ingredients for 4 people: 80 g capers – 30 g butter – 1 clove of garlic – 1 sprig of parsley – 2 tablespoons water – salt and pepper as needed.
First, chop the garlic and parsley coarsely, melt the butter (for the vegan version you can safely replace it with extra virgin olive oil), and pour it into a bowl. Put in this bowl also chopped herbs, capers (previously rinsed), and 2 tablespoons of water.
Season with salt and pepper and, with the help of an immersion blender, mix everything until you get the consistency you like. At the end, you will get a tasty capers cream, ready to be used as a condiment for a first course, as a delicious cream to be enjoyed simply with croutons or to accompany, as already mentioned, a second course of fish.
