GREEN TAGLIATELLE WITH CHEESE
Ingredients for 4 people: 400g green noodles – 100g soft cheese (caciotta or provola) – 110g Gorgonzola – 50g Parmesan – 50g butter – salt and pepper
Cut the Gorgonzola cheese and the soft cheese into cubes and put them in a non-stick pan to melt over low heat.
Melt the butter in a bain–marie.
Meanwhile cook the tagliatelle in boiling salted water; drain, pour into a large bowl and season with the cheese cream prepared.
Sprinkle with melted butter and Parmesan cheese. Serve the green tagliatelle with cheese very hot.
