EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Today we will try a variant of the classic stuffed zucchini, excellent as a second course accompanied by a mixed salad. The preparation takes a few minutes, and the cooking takes about half an hour.
COURGETTES STUFFED WITH MEAT AND THYME
Ingredients for 4 people: 8 courgettes – 100 g. of minced beef – 70 g. of breadcrumbs – 50 g roasted turkey in slices – 50 g. of grated Grana Padano – 1 egg – a glass of whole milk – thyme in leaves (or even chives) – 1 clove of garlic – nutmeg – butter – extra virgin olive oil – salt and pepper
Wash the courgettes and cut them in half lengthwise; with the help of a teaspoon empty them.
Chop the pulp obtained in the mixer together with the roast turkey and thyme (or chives).
In a bowl add the minced meat, the breadcrumbs softened in a little milk and then squeezed. Add the egg, cheese, a pinch of nutmeg, chopped garlic, salt and pepper.
Add the chopped zucchini and turkey to the mixture and mix well. Fill the courgettes, place them in a baking pan lined with lightly greased baking paper.
Sprinkle with grated cheese and butter flakes; finally cook them in the preheated oven to 200°C for about half an hour.
