Here we are today with a colorful and fragrant recipe, as always , ready in no time!
TOMATOES STUFFED WITH COUS COUS
Ingredients for 4 people: 100 g Cous cous – 6 Tomatoes – 150 g Feta – 100 ml Water – 2 tablespoons extra virgin olive oil – some basil leaves -salt and pepper
Wash the tomatoes and empty them of the pulp, turn them upside down and let them drain.
Pour the water into a saucepan, as soon as it comes to a boil, add a pinch of salt and a spoonful of oil.
Pour the couscous and let it rest on low heat until it has absorbed all the water. Pour it into a bowl, mix with a fork and let it cool.
Add to the couscous the diced feta, the basil leaves, he oil, salt and pepper and mix.
Fill the inside of the tomatoes with the seasoned couscous.
Taste cold or bake at 180 º C. for 15/20 minutes.
