How are you? After the banana bread, today we will go for a recipe with a more delicate flavor: the muffins with apples without butter, also suitable for those who are intolerant to dairy products.
So let’s treat ourselves to a little sweetness and delight of the palate with an easy, quick and tasty recipe.
For the vegan version, you can replace the egg with two tablespoons of potato or corn starch.
Let’s start:
APPLE MUFFINS WITHOUT BUTTER

Ingredients for 4 people: 1 egg (or two tablespoons of potato starch or corn starch for the vegan version) – 150 gr. of white sugar or cane (even less if you prefer that it is not too sweet) – 60 ml of oil – 50 ml of milk ( also excellent milk of oats, rice or soya) – 1 jar of white yogurt (125 ml), also here it is fine to use those based on soya – 250 gr. flour 00 – Grated zest of half a lemon – 1 teaspoon cinnamon – ½ sachet of yeast for cakes – 2 apples in cubes – 10/12 paper molds for muffins
Preparation:
Peel the apples and cut into cubes; to avoid blackening, cover with a little lemon juice. Put the egg and sugar in a bowl and mix with a fork or whisk; add the milk, oil, lemon zest, cinnamon powder, white yogurt and continue to mix. Add the baking powder to the flour and add all to the mixture created, mix well to dissolve the lumps. Finally, put the pieces of apple previously cut in cubes into the dough.
Fill the molds for muffins up to 3/4 and bake in a static oven at 180° C. for 20-25 minutes.
Use a toothpick to verify that they are cooked, if it will be well dry will mean that the muffins are ready.
Once out of the oven you can sprinkle the muffins with icing sugar or even leave them natural.
