Saving at home – Vegetarian lasagna

The are endless ways to make lasagna, today we will see the vegetarian version that will also meet the taste of those who do not eat meat.

Let’s start:


Ingredients for 4 people: 700 g eggplant – 4 tablespoons whole milk – 300 g robiola – 250 g pasta for lasagne – 100 g spinach – 6 tablespoons extra virgin olive oil – 250 g cherry tomatoes – salt and pepper – chives


Start with the preparation of the vegetables: wash the eggplants, remove the peel and cut them into horizontal slices of the thickness of about ½ cm.

Put them in a colander sprinkled with salt to let the water out.

After grilling the slices for about a couple of minutes on each side. Add a pinch of salt and a pinch of pepper.

Wash the tomatoes and cut them in half, then boil the spinach.

When the vegetables for the lasagna filling are ready, pour the CREAM CHEESE in a large bowl and after diluting it with milk, begin to work with a wooden spoon.

Chop a sprig of chives and mix with the cheese.

Now proceed to the cooking. Take a baking dish and grease the bottom with a spoonful of oil, then lay a layer of lasagne, put on a few tablespoons of cheese and spread evenly.

Immediately after make a layer of grilled eggplant, chopped tomatoes and spinach.
Repeat the layers of the vegetarian lasagna until the ingredients are finished, then pour a little oil on the surface.

Cover the baking pan with a sheet of aluminum foil and bake in preheated oven at 200 º C. for about 15 minutes.
