Here we are with an easy and tasty recipe to prepare squid.
MACARONI WITH SQUID SAUCE
Ingredients for 4 people: 320 g maccheroncini – 2 squid – chili powder – 1 sprig of sage – 4 anchovies or anchovies in oil – 400 g cherry tomatoes – 1 clove of garlic – oregano – extra virgin olive oil – salt and pepper
Cut the squid into cubes, sauté in a pan with a little oil, transfer them into a plate and ADD salt.
Dice the anchovies (or anchovies), sauté in a pan with a drizzle of oil and 4 sage leaves, then add them to the squid.
Blanch the tomatoes, peel and cut into wedges.
Cook half of the tomatos with garlic, chili and 2 tablespoons of oil until they are discarded, then pass them through a sieve and put them back on the fire with the remaining tomatoes.
Cook on high heat for 2 minutes, add salt, if necessary, to the sauce and lower the heat to a minimum.
Cook the macaroni, drain them al dente, leaving them damp and cook in a pan with the sauce.
Serve with fresh oregano leaves.
