Who says it’s hard to find really tasty vegan recipes? Try this original version of the cous cous with mint and olives and you’ll change your mind!

In addition to everything you will prepare it in no time!

Let’s start:

COUS COUS WITH MINT AND OLIVES

Ingredients for 4 people: 2 spring onions – 1/2 yellow bell pepper (which you can also replace with a rather large tomato cut into cubes) – pulp of 1 tomato – 150 g cous cous – 2-3 tablespoons extra virgin olive oil – 2 tablespoons mint – 1 tablespoon parsley – 1 tablespoon lemon juice – 1 lemon – 1 cup black olives

Preparation:

Take 150 grams of pre-cooked cous cous and put it in a large bowl, add a liter of lightly salted hot water and stir gently with a fork

After 10 minutes, heat 2 tablespoons of extra virgin olive oil in a large pan and then sauté the couscous for 2-3 minutes. 

After this time, remove it from the heat and let it cool in a salad bowl.
Season with a drizzle of oil and 1/2 lemon juice and let it flavor for another 10 minutes

Now put in a bowl 2 spring onions, 1 tomato and 1/2 yellow bell pepper cut into cubes (you can replace the bell pepper with a tomato cut into cubes), 2 tablespoons of mint and chopped parsley, 2 tablespoons of extra virgin olive oil. 

Use the mix of vegetables and aromas obtained to season the couscous

Add the black olives and let stand for about fifteen minutes before serving.
