EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Today’s recipe, the artichoke mousse, is a versatile sauce that you can use to season pasta or, simply, on canapés.
Let’s start:
ARTICHOKE MOUSSE

Ingredients for 4 people: 100 g sour cream – 20 g butter – 20 g parmesan – 8 artichokes – 2 shallots – 1 sprig of thyme – 1 untreated orange – 1 celery stalk – 1 lemon – 1 clove of garlic – a few slices of bread – salt and pepper
Preparation:
Begin by cleaning the artichokes, then cut them into wedges and put them in water acidulated with lemon juice. Finely chop the shallots and the garlic clove. Wash the orange and grate half of the peel.
Melt the butter in a saucepan, add the shallots, garlic, thyme, orange peel and drained artichokes (leaving aside 4 pieces). Season to taste with salt, stir, add 2 dl of boiling water and cook covered over a low heat for about 30 minutes.
Remove the thyme branch, blend the artichokes with their cooking water, pepper and let cool.
Add the cold cream, divide the mousse into the plates.
Decorate with the celery and artichokes kept aside cut into julienne.
Add the Parmesan cheese in very thin flakes. Serve with slices of bread.
