Today’s recipe is for all those who, like me, have problems with dairy products: the recipe for lactose-free banana cheesecake.
This recipe is also suitable for those who want a slightly lighter version of cheesecake.

LACTOSE-FREE CHEESECAKE WITH BANANAS
Ingredients for 4 people: 1 package lactose-free cream cheese – 300 g digestive – 1 jar lactose-free white yogurt – 2 bananas – 2 tablespoons cornstarch (corn starch) – 50 ml warm water – 4 tablespoons sugar – 50 g extra virgin olive oil – 2 tablespoons vegetable milk (soy, almond) – grated dark chocolate
First, with the help of a mixer, finely chop your digestive cookies. Once you have obtained a very fine grain, add the oil and the two tablespoons of soy milk.
Mix well, until you get a smooth dough (if it seems too dry, add some soy milk).
Cover a rectangular baking tray with baking paper and lay the biscuit dough on top.
Press well and let stand in the refrigerator for 15 minutes.
Meanwhile prepare the bananas: cut them into cubes and sauté them in a pan with a tablespoon of sugar. As soon as they get color, take them off the heat.
Now prepare the cream: with a wooden spoon, mix the cheese with the white yogurt and three tablespoons of sugar, until you get a soft cream.
In a cup put the warm water and starch. Mix well and add this mixture to the cream cheese. Mix the ingredients well. This procedure is very important to make the cream become compact.
Remove the pan from the refrigerator. Make a layer with the bananas and then one with the cream.
Let it rest in the refrigerator for at least 4 hours.
Decorate immediately before serving with chocolate chips.
