EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

If you are looking for a method to use bread that is not so fresh anymore, you must try to prepare this tasty bruschetta, a perfect summer appetizer, which you can serve to your guests before dinner even at any other time of the year.
With a few simple ingredients you will get a really tasty dish. The bruschette (toasted bread in Italian), in fact, can be prepared with many condiments, from vegetables to meat, cheese, etc.
The name of these bruschettas derives from their intense flavor, given by the mixture of eggplant sautéed in a pan, dried tomatoes and soft cheese added to the bread in a pan.
The cheese, warm and soft, will bind perfectly to all other ingredients.
Let’s start:
TASTY BREAD SLICES

Ingredients for 4 people: 2 medium eggplants – 200 g soft cheese – 3 slices of homemade bread – 8 dried tomatoes – 2 sprigs of thyme – extra virgin olive oil – salt and pepper
Preparation:
Start by washing the eggplants, eliminating the ends and cutting them first into slices and then into cubes.
In a non-stick frying pan pour a little oil and sauté for ten minutes the eggplant with thyme and chopped tomatoes. Season with salt and pepper.
Meanwhile, divide the slices of bread in two and toast them in a pan on both sides.
While the bruschettas are still on the fire, sprinkle them with the soft cheese cut into pieces, wait for it to melt, then remove the bread from the heat and place it in a plate.
Season with the diced eggplant, the tomatoes and the fresh thyme.
Serve these tasty bread slices (Bruschetta), hot.
