Here we are with a delicious eggplant pie with mozzarella cheese which originates from the Italian region of Sardinia.
A simple recipe to serve a snack different from the usual but prepared with simple ingredients and easy to find.
You will need the typical crispy bread from Sardinia (carasau bread) for this recipe, but if you have difficulties in finding it, you can replace it with toasted arabic bread.
EGGPLANT TART WITH MOZZARELLA CHEESE
Ingredients for 4 people: tomato sauce – 1 round eggplant – 2 mozzarellas – 2 sheets carasau bread (or toasted Arabic bread)
Prepare a tomato sauce with garlic, oil, basil, chilli and salt.
Peel the eggplant, cut into slices and grill in a non-stick pan with lid.
Break each sheet of carasau bread (or toasted Arabic bread) into four pieces.
On a plate put one of the pieces of carasau bread (or toasted Arabic bread); cover the bread with the warm tomato sauce; add the grilled eggplant and thin slices of mozzarella; continue with another piece of carasau bread and again sauce, eggplant and mozzarella, until the ingredients are exhausted.
