EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Here we are today with a delicious and original dish: the piadina (wraps) with salmon, dill and lime, ideal for a quick dinner or for an out of town lunch.
The piadina is an Italian kind of bread, very similar to pita.
The intense and aromatic flavor of the salmon goes perfectly with the sweetness and softness of the cream cheese: here too, a few ingredients for a combination that satisfies the tastes of those who like fish, but who also desire to taste it in a simple way and with a rather simple preparation.
Let’s start:
PIADINA WITH SALMON, DILL AND LIME

Ingredients for 4 people: 4 whole-grain piadinas – 200 g salmon (even better if marinated) – 20 g chopped dill – 1 lime – about 165 g creamy cheese – 20 g extra virgin olive oil – a little water – salt and pepper
Preparation:
Remove the lime rind, taking care not to scratch the white part, and chop it finely with a knife, together with the dill.
Separately, emulsify very little water with oil and the cream cheese until it becomes a fluid mixture.
Cut the salmon into thin slices.
Roll out the piadinas and begin to compose the filling: spread a thick layer of cream cheese, then lay a few slices of salmon, and finally season with the chopped dill and lime peel.
Finally, salt to taste.
Roll up the wraps to form a homogeneous cylinder, and wrap them in a layer of baking paper, closing the ends well to prevent the spillage of the ingredients.
Bake the wraps in the preheated oven at 200 ºC for 6 minutes, turning them on the other side.
Finally, remove them from the oven and let them stand for a couple of minutes, just long enough to set the flavor; serve them still warm after gently removing the baking paper.
