Saving at home – Cheese Gazpacho

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!

This is not the usual soup! This gazpacho made with cucumber, pepper and cheese is very tasty, can be eaten warm in winter and cool in summer.

It will also take only a few minutes to prepare.

Let’s start:

GAZPACHO DI FORMAGGIO

Ingredients for 4 people: 150g of soft cheese – ½ onion – 1 green bell pepper – 1 peeled cucumber – 2 slices of toasted bread – 3 dl of vegetable broth – 1 tablespoon of vinegar – salt and pepper

Preparation:

Chop 150 g soft cheese, 1/2 onion, a green pepper, a peeled cucumber and 2 slices of toasted bread.
Put everything in a mixer with 3 dl of broth, a tablespoon of vinegar, salt and pepper.

Blend until you get a smooth and creamy mixture.

It can be served both warm and cold and with the addition of toasted bread croutons.
