For vegans, just omit the cheese.
ZUCCHINI AND PEA SOUP WITH CHEESE
Ingredients for 4 people: 2 zucchini – 30 g fresh peas – 120 g Creamy cheese – a tablespoon of oil – salt and pepper – bread croutons
Start by boiling the chopped zucchini and peas in very little water for 15 minutes.
Blend together with the cheese, oil and a little of the cooking water of the vegetables until you get a cream.
Season with salt and pepper and serve the zucchini and pea cream very warm or, if you prefer, let it cool to enjoy it even in the summer.
You can also serve this delicious cream with bread croutons.
